Just about everything is in season now. Last week’s farm share included green beans and a 10 pound basket of tomatoes. I started a tomato sauce this morning and am going to use the basil I picked up to put together a basil and mint pesto for dinner tonight. There’s no reason to visit your supermarket’s produce section at this time of year, right when everything’s in beautiful full bloom. Visit your farmer’s market soon!
I was tired last week when the hubby got home with our farm share. I figured it was going to be a day for steaming veggies and putting together a quick basil pesto using my go-to recipe in The Moosewood Cookbook Cooks at Home. I got the idea for this pesto salad from that same cookbook. Proportions are variable, but call for potatoes, green beans, tomatoes and fresh mozzarella. Put the veggies and cheese together in whatever size suits you best, then scoop in freshly made pesto. Viola – dinner!
